the Good Drop, the GoodDrop, energy balls, meal replacement, protein balls, Young LivingI would love to say I am one of those moms who gets their kids out the door each morning with a tummy full of a healthy breakfast that we ate together at the breakfast table with kumbayah playing in the background, but I am not. So if you are like me, and mornings are often a rush, you may want to try this quick easy, healthy recipe for Chocolate Peanut Butter Energy Balls with Young Living’s Chocolate Pure Protein Complete.

Ingredients:

  • 20 dates (pits removed)
  • 1/2 cup Peanut Butter (preferably no sugar added)
  • 2 scoops Young Living Pure Protein Complete (in Chocolate or Vanilla Spice)
  • Pinch of real salt (with naturally occurring trace minerals)
  • Shredded coconut for coating

Pulse first 4 ingredients in a food processor (I have this one which I really like – there is also a 14cup version which would be better if you cook often).  You can also use a blender if you don’t have a food processor.  Once the mixture is smooth, roll into balls using hands and then roll in coconut.

You can make them your own by adding other butters (almond or cashew) in place of the peanut butter or by adding other dried fruits. They are so simple to make with endless flavor varieties. The chocolate peanut flavor is a hit with my kids.

As Chef from South Park would say “Say, everybody, have you seen my balls/they’re big and salty and brown/if you ever need a quick pick-me-up/just stick my balls in your mouth”.

All jokes aside – these are SO easy and absolutely delicious.  The balls are super easy for them to eat in the car on the way to school, or for me as a quick snack, or even meal replacement when I am in a rush.  Fast, Healthy, Easy.
