Working as a frontline hero or working from home, playing teacher to your kids (also from home), and basically just being home all day every day. We all survived and made it. Let’s treat ourselves, shall we? Here’s the twist: we’re still gonna try and make it healthy. 😉

Let’s look at this recipe from Young Living for Guilt-Free Peppermint Brownies.

Ingredients:

  • 1 15-ounce can of low-sodium black beans (yes, you read that right!)
  • 1/3 cup coconut oil
  • 1/4 cup unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 cup honey
  • 3 eggs
  • 2 drops Peppermint Vitality essential oil

Instructions:

  1. Preheat oven to 350°F.
  2. Rinse and drain black beans.
  3. Melt coconut oil on stove until clear.
  4. Blend all ingredients except egg in a food processor until smooth.
  5. In a separate bowl, lightly whisk eggs until well beaten.
  6. Fold into chocolate mixture.
  7. Pour mixture into a greased 8×8 pan and bake for 25-30 minutes.
  8. Once done, let it cool for 15 minutes then cut.
  9. Let cool for another 15 minutes, then serve.

Maybe you don’t want to go healthy with it and you just want a treat. I get it. No judgement here! Just add a few drops of Peppermint Vitality to your brownie recipe and enjoy. 😊

Either way, if you have kids, include them in the process! It’s a fun activity to do together that is not you trying to teach them Math (though you will, they just won’t know it 😉) and is rewarding in such a tasty way at the end.
